Easy Pie - Dessert or Cake

This dish has been around in a number of versions a friend of mine calls her No Stuff Up Pie, I call it Easy Pie, even Lady Flo Bjelke-Petersen put in her recipe book awhile back & called it Impossible Pie but what ever it's called it's easy to make & tastes wonderful.

You can have this dish by itself with some coffee or tea or even as a dessert with some Ice Cream.

Easy Pie

Utensils

Blender
Pie Dish (about 25 cm to 30 cm)
Measuring Cups

Ingredients

1 Cup Desiccated Coconut
1 Cup Sugar
2 Cups Milk
Half Cup Plain Flour
Half Cup Butter
2 Teaspoons Vanilla
4 Eggs

Method

Turn the oven to moderate (180 Celsius to 200 Celsius), grease the pie dish then blend all the ingredients in the blender. Once that is done pour mixture into the greased pie dish, place in the oven for an hour or until centre is firm.

You will find the coconut forms a nice topping, the flour forms the base and the eggs become a egg custard filling.

I've also learnt to make two pies at once as one is never ever enough for this family.

  1. Oh yes, that's a family favourite here too, and got it from Lady Flo's book. As you say, impossible to stuff up, and you can substitute whatever you have in the fridge/freezer. You have to love easy-make meals like that!

  2. I do love it but at the moment our family can't make it as my blender is broken. I'm hoping to get a food processor & blender in one combo
